TURKEY DAY...

blah blah, i know..... pilgrims, indians, maize etc... but let's face
it. Many of us would much prefer the drama of the annual family get
together. That is if it weren't for the turkey.

Well I am here to release you from going to the family drama-scape just
for turkey. Frozen turkeys are cheap (39 cents a pound?? CHEAP)
pre-brined (read as: juicy) and very VERY easy to cook.

here goes:

First and Foremost: cook that turkey upside down. I did this
accidentally the first year and it came out incredible. The second year
I intentionally tried NOT to invert the bird, and then in the midst of
telling the story (to family) of the previous year, i realized my
mistake. again. Now i embrace it with a whole inverted ideology:

Skip: All other prep. There are all kinds of themes: Herbs and fruit
inside. Butter under the skin. Stuffing inside. SKIP IT. Your prep
should be the following:
1 tbs (thats it!!! MEASURE IT) of normal olive oil. put it in your
hands, rub it around, massage el birdo del dia. Then Kosher Salt and
fresh ground pepper (just a wee bit all around is fine)

Cook: When the turkey is around 150 degrees (of course all geeks use a
digital temp probe right?) flip the bird and put it up on a rack so the
breast skin is crispified by 160 degrees. (remember to take it out at
160, as it will keep cooking and should rest for at least 15 minutes...)

I assure you, this method is better than any mom/dad/grannie/aunt Edna/
method out there. its simple, no fuss and incredible!

who knows, you might start eating turkey on any given sunday!

Sounds great, but imagaine a turkey without bones. I usually bone a turkey and stuff it with a mix of rice, wild rice, lemon zest, various nuts and herbs. Not only is it easy to carve – in fact you just slice it – but makes the bird go further.

very nice!! how do you bone it though?? I am a bit of an amatuer, but that confuses and frightens me (after all I only an ufrozen caveman lawer)
